You've probably saved the email address and password into your phone. If you
get into the settings for that email you should be able to change the password
used.
Its a common practice with email clients and the communication to the server

Nobody. Pulling the battery from your phone doesn't wipe it's memory. When
you associated your phone with your account you had to input your password. The
phone then obtained a token from Google which it can use to authenticate itself.
As long as your phone retains that token, it can access Google and be recognized
as having been authenticated. To wipe it you'll need to remove your Google
account from your phone, or go through the Factory Reset procedure to wipe the
phone and return it to the state it was in when you bought it (the former will
work for just dropping access but I'd recommend the latter before you give away
