And then when you want it all - i.e. you find you cant live without some of the bits that X provided

A lot of X isn't used anymore, but the legacy stuff is still there for backwards compatibility just in case someone needs it. Almost all modern applications use higher level tool kits (e.g. KDE, Gnome), which in turn only make use of a small subset of X. The Wayland project was started by X developers as an attempt to get rid of legacy X features. However, Wayland seems to be taking forever. The overwhelming majority of Linux UIs are based on Android, not X and Canonical are afraid that their own window of opportunity is running out. Canonical had helped to pay for Wayland development, but now seem to have given up on it.

I see what they are trying to do but I dont want a same everywhere desktop

It sounds like you don't see what they are trying to do. They don't want a "same everywhere desktop". The "touch" UI is different from the desktop UI. If you write an app, there are supposed to be separate UIs for phones, tablets, and desktops. The application will then automatically use the appropriate UI depending on the current platform or mode. The ability to do that is the reason for using QML.
