Aside from the price of the Chromebook Pixel, the H/W is no great shakes.
but getting onto your main point about someone putting a mainstream distro onto
a Pixelbook.
Ain't gonna happen in a big way at all. Google would have to sell them in
quantity to a 3rd party who would then have to mod the H/W and then install and
support whatever distro they put on it. Fedora is a non starter as it is a
bleeding edge test bed so lets say Mint is used.
Don't you think that the chocolate factory will be just a little bit peeved that
their 'google' branded bit of kit is being abused like this?
I'd fully expect a DMCA notice to be issued if this took off in any way.

Ubuntu & 'apt-get' are not the answer to Life, The Universe & Everything which
is of course, "42" or is it 1.618?

I would say that if they put them in mainstream stores and allow booting
ChromeOS, Android and a full Linux distro (Mageia & Ubuntu comes to mind) it
would be a very attractive package.
