Sounds like you first need some electoral reform.
Where I vote no candidate may stand for more than one party.

Maybe there's your problem, it's the system that's been nobbled,
and dud voting machines is just a frill on the side.

That system has worked very well in the UK for many years, although there are moves afoot to change to an electronic system. Fortunately, the current lack of cash may prevent that for a while. As far as I am aware, the counting is done by volunteers, who are in adequate supply, and work very efficiently.

We have had some quite complex ballots, with different elections combined, which took a bit longer to count, but worked.

The only real concern is that the ballot papers are stored in perpetuity, so an unscrupulous and corrupt government, of which we have had at least one in the last 10 years, can theoretically find out who voted for the opposition.

You can choose how many races there are on your ballot paper. Just because you
have 7 votes on the same day doesn't mean you have to put them all on the same
piece of paper. One ballot paper per vote differently coloured so they can be
told apart easily.

Always hand counted. In public.
