I have a couple programs that are MAC/Windows only. Everything else is done
under Linux.

At this point, I haven't been able to figure a way to set up a comparable system in Linux. I always end up having to give up this or give up that
LOL - I always end up trolling the net (sometimes in vain) to find utilities that come standard in Linux. grep and diff spring to mind as my #1 need to install after installing Windows

Part of the problem is that MS and Apple have boxed people into an idea of what a computer needs to do - If it ain't in Windows it's obviously not needed, and if it is in Windows, it obviously is needed

Here's a friendly suggestion. Get a second laptop
and put Linux on it. Use it when you feel like it,
but keep your old laptop also. When you need a
certain app that you can't figure out how to
duplicate (yet) on Linux, use the old system. Little
by little, here's what will happen: as you comfort
level goes up, sue to learning more and habits
forming, you will do more and more on your laptop
with the GNU/Linux system on it, because it's so
fast and so enjoyable to know no one, as far as
vendors are concerned, is tracking you. It's just
a very lovely feeling.

But at the same time, you have what you need when you
are working so you are never at a loss.

what programs/functionality?

As indicated - let us know the programs - or at least the
FUNCTIONALITY of the programs. I've known people to tell me
they can't use Linux because it doesn't do MS Word. In
questioning, it's because they want to be able to do word
processing. I gladly point out OpenOffice.org (and now
Libreoffice), KWord (Calligra), etc. Sometimes they are good
with it, other times "but it's not Word!" - for those I have
no answer.
